Apple mousse, Ibrica Jusic


I understand a few of you have been waiting for the next post from my Baka’s kitchen. Sorry to keep you waiting. Here is a simple recipe Miss F. and I whipped up together this afternoon. The recipe contains raw egg whites for those of you watching for that kind of stuff.

Apple mousse

Ingredients
About 1/2 kilo or a bit over a pound of cooking apples (green or yellow)
2 egg whites
cinnamon, sugar
vodka (optional)

Preparation
Preheat the oven to 200C (about 400 F).
Put the apples on a cookie sheet or in a cast iron skillet and let them bake until the skin breaks and the apples are quite soft.
Peal the apples and mash them. I scraped off as much of the meat as possible and just mixed it for a minute. Let the apples cool.
In a bowl whisk the egg whites until stiff. Add sugar to taste.
When apples are cool fold them into the egg whites. Add a tiny bit of cinnamon and a teaspoon or two of vodka if using. Put it in the freezer and let it cool for a couple of hours at least.

Also, my dad (who does not have a blog, but should) was kind enough to send a photo of the original recipe so you can see what these yellow sheets look like.

There is something else I'd like to share. Two years ago, when I was in Bosnia, a friend (who runs a cool web site about literature) let me listen to a CD of a Croatian singer Ibrica Jusić singing traditional Bosnian songs. I got a CD before I left and would occasionally listen to it. Since she was born Little Miss F found the music soothing and would invariably fall asleep by the third song. I recently stumbled upon two of our favourite songs on YouTube (while visiting a blog of a politician I interviewed for a CBC radio piece on Croatian elections): Emina and Yellow quinces.
